A true traditional jazz classic, That’s A Plenty has its origins in music forms used by marching bands: the first strain, the second strain, a key change and then the third strain referred to as the Trio, which is often used for (collective) improvisation in traditional jazz. Because of the non-typical Hammond organ in this music, Bob decided to throw things around. All the elements are in there, even the key change, but not like it used to be. Added to it is a bit of the Spanish tinge, as Jelly Roll Morton calls it, which was derived from the habanera rhythm and plays a big role in New Orleans music.
